Ah, the weekend is almost here!! I for one could not be happier!!
This will be the last weekend for a while that we don’t have plans so I am going to soak it up and enjoy some down time with the family! Swimming, baking, reading and napping are all on my agenda. I sure hope it works out for me!!
For now though, I thought I would share some of my favorite foodie finds(including recipes) that I have been enjoying of late!
Let’s start with the store bought stuff!!
1. Perdue Gluten Free Chicken Tenders
In a million years I never thought I would be raving about frozen chicken anything but I promise y’all, these are REALLY good!!! Originally I bought them for my kids because the ingredients list was pretty darn good and I ended up snagging one for myself. I was impressed!!! Anyone who knows me in real life understands how picky I am about meat so this is saying a lot!! If you are okay with them not being organic and all that jazz, you should definitely try these. I have some in the oven right now and will be making a buffalo chicken wrap with them!!!
2. Chobani Flips, Key Lime Pie
To say that I am obsessed with this flavor would be a complete understatement. I.LOVE.THESE!!! And like I used to say in grade school, I would marry it if I could!!! I have one of these almost every single day and on occasion, I have two!!! Yep, I love them that much!! I have tried some other flavors and while they are good, they don’t do it for me quite like the key lime pie does. Heaven in my mouth!!!! I have to say though, until a week or two ago, I had no idea you were supposed to literally flip the goodies into the yogurt portion. Once I figured that out, I loved them even more!!!
3. Bluebell Coconut Fruit Bars
I discovered these last Summer and again, they have become a Summer time staple in my house. I cannot even describe to you the deliciousness that these are. Creamy, cool and coconuty( that’s probably not a word, but oh-well!!) I just love the real bits of coconut in every bite!! While they taste really decadent, they are only 110 calories!! Sadly, I think Blue Bell might be a Southern thing(correct me if I am wrong) which means some of you won’t be lucky enough to enjoy these.
Moving on to the tasty creations I have whipped up in my own kitchen recently, thanks to some super great recipes out there!!
1. Baked Turkey Burritos
I am all about Mexican food, all the time!!! There is hardly a moment I will turn it down. However, it can be pretty tricky to eat at a Mexican restaurant without completely going overboard on the chips and salsa…and well, just about everything else!! That’s why I am thrilled anytime I come across a Mexican recipe that I can make at home. Enter this one from Mix and Match Mama!! Simple, quick and incredibly good!!! And you can totally change it up with whatever ingredients you want….ground beef, shredded chicken, brisket, black beans and sweet potato…..whatever floats your boat!!!
2. Hoppin’ Johns
Believe it or not, I found this recipe on the back of a black-eyed pea can!! I did change it up a little bit, adding turkey bacon rather than ham and eating it with brown rice rather than white but however you spin it, I think it would still be really tasty!! Again, this was another recipe that was super easy to make and came together in no time at all. Best of all, it was all done on the stove so I didn’t have to worry about heating the house up.
3. Slow Cooker BBQ Pulled Chicken
We had this last night for dinner and I could hardly contain myself while it was cooking all day! It made my house smell SO. GOOD!! I even had a neighbor drop by and the first thing she said is, “Whatever you are cooking smells so incredibly good”! And you know what, she was right!!! I have to thank Courtney for this recipe and like always, they never disappoint! I am just a tad bit excited about dinner tonight because this will be on repeat!!!
